Ya-Ya Chicken Soup and Broc-Cauli Bacon “Chowdah”

YaYa Chicken Soup

1 sweet potato, peeled and cubed

2 tsp ginger, grated

2 shallots, diced

2 carrots, chopped

“zoodles”

6 TBSP of Osteobroth

3 C water

Combine sweet potato, carrots and shallots with water and allow to simmer over medium heat until softened.  Approx. 15-20 min.  Mix in ginger, zoodles, and osteobroth and allow flavors to meld for about 10 min.

 

 

Broc-Cauli Bacon “Chowdah”

4 C broccoli

4 C Cauliflower

3 C Water

6 Tbsp Osteobbroth

4-6 slices of bacon

1/2C coconut milk

salt and pepper to taste

 

In large sauce pan, pan fry the bacon. Once bacon is fully cooked, remove and set aside, leaving the bacon fat. Steam broccoli and cauliflower in large steam pot. Once soft, place in large sauce pan and add 3 C of prepared Osteobroth. Mash with a potato masher or blend with emersion blender. Add coconut milk, salt, and pepper and simmer for 10 min.

Serve with chopped bacon sprinkled on top.
